I think we've already done Japanese at least once, so Hawai'ian would be more interesting, in my mind.

I am thinking of changing the grammar in a way that is significant yet different from other Germanic languages. Yet I know it should follow the evolution of other Germanic languages as it is close to Rome :P

You can always set it up for some sort of radical syntactic alteration later on. It also isn't necessarily close to Rome, the tribes have just adopted writing and some other Roman customs. They don't even have intrusive Latin and Greek loanwords yet. Try dumping a few of those in but maintaining their original inflections or approximations thereof and analogise them to certain native words that have a vaguely Classical sound to them, if you're looking for a place for some more radical changes to begin?
