Sometimes i pronounce it without the *r
(actually i forgot the last syllable is rounded and it rhymes with bull i keep mixing up the two sounds)

I have [tɔ:rk] for "talk" it rhymes with "stork" and "stalk"

I have [tˢo̞ːk]; it also rhymes with ‘stork’ and ‘stalk’, which are both [sto̞ːk] for me.

... where /r/ may be realised as zero or as a slight modification (pharyngealisation?) of the vowel, but I'm confident it's phonemically present in this word. Also, /mf/ in post-stress position (as here) tends to have an intrusive [p], but I don't think I'd analyse there being a /p/ there.

I've seen that misspelling often enough that for a while, I was seriously confused about what the correct English spelling of the word is.

I have [p] in hamster but that reflects an underlying /p/, as I pronounce hams as [ˈhɛ̃ːə̯̃ms], i.e. without [p] or [b].

Edit: Corrected hams to include a long vowel, reflecting underlying /z/.

I'm particularly wondering about how NAE-speakers pronounce the vowel in the first syllable.

Does anyone with Canadian raising have raising in "high chair"? I know that some have raising in "high school".

Yep, for both: [ˈhəe̯ˌtʃʰɛ̝(ː)ʁˤ], [ˈhəe̯ˌsku(ː)ʊ̯].
