I like that idea. Japanese could also get interesting.

I think we've already done Japanese at least once, so Hawai'ian would be more interesting, in my mind.

I'll bite!
  • Long and overlong vowels *ō *ô merge; nasalisation disappears from long vowels;
  • Long vowel and diphthong chain shift */au ai eu oː eː / > [oː eː joː aː iː];
  • Short vowels show lax realisations (now reflected in the notation);
  • A form of the nasal-spirant law applies
  • Long closed syllables tend to drag stress;
  • Terminal labialised consonants delabialise and eject [ʊ]
  • i-mutation; [t d k g] > [ts dz c ɟ] before front vowels
  • [b] vocalises to [ʊ] in coda; [g] vocalises to [ʊ] or [j] depending on the preceding vowel;
  • Final [z] devoices
c. 350-500

Archaic Allemanish, as it is called in English, the language of a Germanic people in an alternate timeline who were early adopters of Roman customs, like writing, but, at this stage, seem to have had little widespread use of Latin outside very educated circles:

The use of the distinct letters "v" and "j", the circumflex for stressed long vowels, and the macron for unstressed long vowels, are modern editorial conventions applied to the text.

I am thinking of changing the grammar in a way that is significant yet different from other Germanic languages. Yet I know it should follow the evolution of other Germanic languages as it is close to Rome :P

You can always set it up for some sort of radical syntactic alteration later on. It also isn't necessarily close to Rome, the tribes have just adopted writing and some other Roman customs. They don't even have intrusive Latin and Greek loanwords yet. Try dumping a few of those in but maintaining their original inflections or approximations thereof and analogise them to certain native words that have a vaguely Classical sound to them, if you're looking for a place for some more radical changes to begin?

I could see rhotacism developing from how retroflexes are articulated.

Not quite the same thing, but here are some Tangut correspondences (with approximate reconstructions of phonetic readings)

1kir2 [qʕī̠ʳ] 'to chew' ~ Wobzi rqæ̂i 'ronger'
1kor1 [qō̠ʳ] 'throat' ~ Wobzi rqê, Japhug tɯ-rqo, Geshiza rqua
1tsur1 [tsū̠ʳ] 'winter' ~ Wobzi rtsô, Japhug qa-rtsɯ, Geshiza rtso
2zewr1 [zě̠wʳ] 'leopard' ~ Geshiza rzəu

2kar1 [qǎ̠ʳ] 'to separate' ~ Geshiza ɴqar 'to disperse'
1jwyr3 [ndʒwə̄ʳ] 'mill' ~ Wobzi jdzə̂r 'moudre', Japhug kɤ-ɣndʑur 'moudre'
2gwyr4 [ŋgwə̌ʳ] 'back' ~ Japhug tɯ-mgɯr

2rar4 [rǎʳ] 'horse' ~ Japhug mbro (< *mraŋ)
2rir4 [rǐʳ] 'to stay, remain' ~ Japhug ɕɤ-rɯ

1phon2 [pʰʕȭ̠] 'white' ~ Phosul pʰrəˠm, Japhug wɣrum
1biq2 'willow' [mbʕī̠ˀ] ~ Japhug qa-ʑmbri 'saule'
1khwy2 [χʕwə̠̄] 'horn' ~ Japhug ta-ʁrɯ, Geshiza qrə, Zbu tɐ-ʁrə̂

Preinitial r becomes vowel rhoticity, initial r conditions vowel rhoticity, and medial r becomes... grade 2. (I'm not sure what happens to final r - I've just left out the correspondences where rhoticity isn't reflected, which I think are more numerous than the ones where they are.)
