* Nimmer is not wrong. It's just not standard German - it's only really used in the southern dialects. Do with that information as you will.
** Wollen takes an accusative object. Ihnen is dative. It's sie in nominative and accusative. I also kind of feel like adding another verb in here too: maybe haben but that also feels kind of awkward. You could also drop the sie wollte before the relative clause because the heavy, wordy stuff tends to gravitate towards the end of the sentence so you're not waiting too long for just a couple of words that you could get out of the way quickly - just a stylistic thing: weil niemand sie (haben/besitzen) wollte, mit dem ich gelebt habe. Still, aside from the ihnen, what you said is all correct! :-)

* I'm pretty sure you meant selbstbewuster to tell us how you write rather than how you begin, so it needs to go in the infinitive clause. You could have also said selbstbewusster Deutsch zu schreiben and that might be more natural actually, but I'm not sure. Spontaneously, I'd say Ich werde langsam selbstbewusster beim Deutschschreiben, but when picking it apart like this, I start to doubt everything and want native speaker supervision, lol.

Ich hatte nicht gewusst, dass auf Deutsch man "Geburtstag hat".
I didn't know that in German one "has birthday".

Ich muss sagen, dass ich mag, Dinge auf Dialekten von verschiedenen Sprachen zu sehen.
I must say that I like to see things in dialects of various languages.

You could also use gerne sehen instead of es mögen, ... zu sehen.
* Dinge makes me feel uneasy. Sachen is a bit better here. I think, in general, Dinge are more likely to be physical objects and Sachen can be either tangible or intangible.
